Penne Pasta with 'Nduja

'Nduja is a ready made sauce, it is made from a particularly spicy salumi from Calabria. It is mainly served with slices of bread or with ripe cheese, or it can be added to pasta sauces.

  • 250g RUMMO Penne Rigate
  • ⅓c Finely Chopped Onions
  • 4tb Extra Virgin Olive Oil
  • 2 Garlic Cloves - peeled & minced
  • 3tb 'Nduja
  • 100g Fresh Cherry Tomatoes
  • Salt & Pepper
  • ½c Cooked Chickpeas
  • ¼c Fresh Parsley - chopped
Cooking time: 
20 minutes
In a small saucepan, heat the olive oil and cook the onion until it's translucent.
Add the garlic and 'nduja, and stir until the 'nduja melts into the oil.
Add the tomatoes, salt, pepper, chickpeas, and parsley and cook over a low heat for about 10 minutes.
Cook your pasta until "al dente" and drain.
Return the pasta to the pot, add the 'nduja sauce and cook for a minute or two over a high heat, stirring constantly.
