Provolone is made from Cow’s milk in the north of Italy. It’s made with Pasta Filata technique, which means “spun paste” in Italian: a unique stretching process that gives them a characteristically stringy, stretchy quality. Provolone piccante is aged for a longer period of time than Provolone Dolce and has a stronger taste.
